On the last ep. 4.19, the future of 2036, as the future daughter, Henrietta, interacted with the Observer at the night club, I recall that she came away from that encounter thinking that the Observer couldn't read her mind, and that was the reason why she was so important - and vicariously so were Peter and Olivia.

But upon the first time I watched the scene, there was a part of the sequence where the audience could hear what the Observer could hear of Henrietta's mind. And when that happened I swear that I could hear her think, "I hope he doesn't suspect me" or "I hope he doesn't know about us." That wasn't verbatim what she thought but along the same lines. Did anyone else pick this up? And if so, couldn't the Observer assume, though the thought was rather vague, couldn't the Observer extrapolate that Henrietta had something to hide - like being an undercover operative for a terrorist cell?

Eh, just saying, it was a split second thing that I heard and was wondering if anyone else picked that up.

Yeah, I noticed that too. Following the finale, it's obvious that Etta's abilities in blocking the observer from reading her mind were caused by Olivia's cortexiphan abilities. Walter said in the finale that the cortexiphan may leave some biological signature, and while not actually being in her system anymore, trace elements still remained. That isn't to say that the cortexiphan was the direct cause of her mind reading block abilities. It could simply be the catalyst, maybe she as part of the resistance was able to train her mind to block out the Observers as a consequence. We shall hopefully see in season 5 then...
