It's her facial characteristics more than anything else: the eyes, the oblate oval face and smooth complexion (lose her long hair)... now look at the Observer -- eeep! Creepy!!

Also, will this not explain her abilities, and their morbid interest in her??

hehe, but she doesn't eat spicy food. And the reason why they are watching her is that she is a crucial person to the future and the person who is developed by Walter and Bell to protect this world. I just feel that the observer may have some feeling to her and may one day help or save her:)
